Making the Jennifer Aniston Salad! Easy Quinoa Salad - INBELLA (2024)

Ingredients:
1 cup uncooked quinoa
1 15 oz can chickpeas, rinsed and drained
1 cup chopped cucumber
1/3 diced onion
1/2 cup mint and parsley chopped
1/3 cup roasted pistachios
1/3-1/2 cup feta cheese or other sharp cheese, crumbled or grated

Dressing:
Juice of 2 lemons
1/3 cup olive oil
salt and pepper to taste

Directions:
Prepare quinoa according to package directions and cool. In a large bowl combine quinoa and remaining salad ingredients. In a small bowl juice the lemons and mix well to combine with oil, salt and pepper. Drizzle over salad and toss to coat. Enjoy!

Hey everyone Emily here and welcome to my kitchen today I’m going to be making another recipe that I found on the internet this is one that was going around Tik Tok last year and I have made it a few times since I first saw it it’s called The Jennifer Aniston salad it’s a

Quinoa salad full of fresh vegetables some chickpeas and it makes a really great meal I was really craving it so I thought why not throw it together let’s see how it turns out the base of this salad is quinoa and I’ve started off by preparing one cup of uncooked quinoa on

The stove it’s a 2:1 ratio you add two cups of water to one cup of quinoa I have that cooling right now so I’m going to work on the rest of my salad ingredients so into a large bowl I’m going to start off by adding in one can of drained and rinsed
